How To Make Aloo Palak

INGREDIENTS:

  • 2 bunch palak / spinach(200 to 250 grams)
  •  water
  • 4 medium sized potatoes
  • 3 green chilli
  • 3 tsp oil
  • 1 tsp ghee
  • 1 inch cinnamon
  • 4 cloves
  • 1 pod cardamom
  • 1 bay leaf / tej patta
  • ¼ tsp turmeric powder
  • ¼ tsp asafetida (hing).
  • 2 onion, finely chopped(medium sized)
  • 2 tomato, finely chopped
  • Salt (as per your taste)
  • ¼ tsp garam masala
  • 1 tsp besan paste(optional)

 

INSTRUCTIONS

Step 1:Boil or steam 4 medium sized potatoes in a pressure cooker or Vessel, Till  the potatoes are completely cooked.

Step 2:Then peel and cut the boiled potatoes into dice. Keep aside.

Step 3: For Blanching Palak , take plucked  palak leaves in large bowl and wash it well to remove mud from it.Strain the leaves to remove extra water.

Step 4:  Boil 3 cups water in a pan. Add ¼ tsp salt to the hot water and stir. When the water starts boiling, switch off the flame. Add the spinach leaves in the hot water. Let the palak leaves sit in the water for about 2 minute.

Step 5: After 2 minute, Drain and immediately place the palak leaves in cold water for 3 to 4 minutes. You can add few ice cubes to make the water cold.

Step 6: Drain again and along with 1 to 2 green chilies, make a smooth puree in a grinder or blender. Keep aside

Step 7:For making Masala, Take a pan or kadai, Heat 3 tsp oil and 1 tsp Ghee, then Add one small to medium-sized tej patta, 1 inch cinnamon, 4 cloves, 1 pod cardamom, roast it till they become aromatic.

Step 8: Then add finely chopped onions. saute till the onions become golden brown. Then Add chopped tomatoes and ¼ tsp turmeric powder and ¼ tsp asafetida (hing).saute the tomatoes till they soften.

Step 9: Add the palak puree. Add 1 tsp besan paste or gram flour paste (if you want thick and sweet curry dissolve the besan in 3 to 4 tbsp water and make a smooth paste. then add this paste to the palak mixture so that you can avoid lumps in it.)

Step 10: 1 cup water and salt according to taste Simmer the gravy for 6-7 minutes or more till the palak or spinach is cooked.(You can adjust the consistency by adding more or less water.)

Step 11:Next add the cooked potatoes. Simmer aloo palak curry for 2-3 minutes more, till the color of the spinach changes.

Step 12:Sprinkle  ½ teaspoon garam masala powder &  Stir and cook aloo palak gravy for a minute.

Serve Aloo palak hot with some  rice or parathas or roti.
