                      How To Make Palak Rice

INGREDIENTS:

·       2 cup  Basumathi rice/Sonamasuri rice 

·       4 cup  Palak leaves(roughly chopped)

·       3 Green chilli

·       ½ inch ginger

·       5 garlic cloves

·       2 tbsp oil

·       1 inch cinnamon

·       4 cloves

·       2 pod cardamom

·       1 bay leaf / tej patta

·       ¼ tsp turmeric powder

·       1 tsp cumin seeds

·       1 onion, finely chopped(medium sized)

·       Water (basumathi rice 3 cup water / sonamasuri rice 4 cup water)

·       Salt (as per your taste)

·       lemon juice.

 

INSTRUCTIONS

Step 1: Rinse the Palak leaves very well and roughly chop them and also rinse the rice in a vessel and keep aside

Step 2: Now add the spinach leaves in a blender or grinder jar. Also add 2 to 3 green chilies, ½ inch ginger and  5 garlic cloves. Blend it to smooth paste. Keep aside.

Step 3:  In a pressure cooker, heat 2 tbsp oil. Add the following spices  –  4 cloves, 1 inch cinnamon, 2  cardamoms, 1 tsp cumin seeds and 1 tej patta or Indian bay leaf . saute them for 1 minute

Step 4:Then add finely chopped onions. saute till the onions become golden brown. Then Add  prepared palak  puree and  ¼ tsp turmeric powder, mix it well and saute for 4 to 5 minutes.

Step 5: Add  water(basumathi rice 3 cup water / sonamasuri rice 4 cup water), salt as required and few drops of lemon juice.

Step 6:When water starts boiling add rice, mix it well and close the lid, pressure cook for 2 whistles.(if needed 3 whistles).  when the pressure falls down in the cooker on its own, then remove the lid and gently fluff the  rice.

Now the Palak rice ready to serve
